THE IMPROVER BUSINESS
Our business uses a far greater amount of various improvers in a month than any ebay business actually sells in a year. We do use the expertise of the manufacturers baking technicians (as well as having an excellent one of our own!) To be truthful, and suggesting possible products apart, we do not work closely with the manufacturers because they are all geared up to the baking industry in general because that is where their volume of business lies. If there was a large market for improvers for the home baker you would be able to buy them off the supermarket shelves. What we do is to select and test products from the wide range of improvers available , firstly in the bakery, if it produces good results, we then test it's suitability for home baking, sometimes our technician will give it a little 'tweek'. We then ask selected customers to test it, before deciding whether to add it to our listings. To date we have not found one that is better than our current multi - purpose improver.
FERMENTATION
Fermentation is an exact science with just a few basic rules. Once these rules are mastered, anyone can make bread of consistent quality. To help master these rules, we provide a comprehensive recipe and advice service, for those who use either a bread maker or those who have a preference for more traditional methods of bread making.
